To finely shred means to make long, thin strips of the vegetables. While certain root vegetables can be shredded with a box shredder or a mandolin, others are done with a knife. The carrots are first cut into slices and then finely sliced into long thin strips. This can be used for dishes like gajar halwa, as part of a coleslaw and salads like the Som Tam, etc.
